Lentil Soup with Potato and Herbs

Ingredients (4 portions): 1 onion, 1 teaspoon wheat germ oil, 75g black lentil, 750ml vegetable broth, 300g potato, 150g sour cream, salt, black pepper, 1 bunch spring onion.

Directions: Peel the onion and finely chop it. Heat the wheat germ oil, and fry the onion and lentils over medium heat, stirring frequently. Pour vegetable broth, bring it to the boil and cook covered with lid for 20–30 minutes so that the lentil gets soft. While the lentil is boiling, peel the potato and dice it. Add potato to lentils, bring to the boil and cook for 10–15 minutes more until lentils and potato get soft. Add sour cream and boil for a while. Season with salt and pepper to taste. Pour soup into the plates, cut spring onion and sprinkle over the dish.
