Chive And Basil Paste Garlic Vinaigrette

Ingredients

  • 1 large garlic clove, peeled
  • 3/4 cup loosely packed fresh basil leaves
  • 2 Tbsp. minced fresh chives
  • 2 Tbsp. Leatherwood Vinegary Basil in Tomato Wine Vinegar
  • 8 Tbsp. Smude’s Sunflower Oil
  • Salt and freshly ground black pepper

Process

In the workbowl of a food processor, with the machine running, drop the garlic through the feed tube and process until finely minced. Add the remaining ingredients and process until smooth. Transfer to a small bowl, season with salt and pepper and use in desired recipe.

This vinaigrette is delicious on just about any vegetable salad and even as a dip for a crudité platter. It makes a wonderful sauce for grilled chicken or fish kebabs as well. For an extra burst of flavor, try spreading a little on bread for paninis, such as Italian ciabatta or foccacia, before assembling the sandwich.
