5 tablespoons seeds of amaranth, 2 cups of water, 1/3 cup of wine vinegar, 2 tsp. soy sauce, 2 cloves garlic cloves, 1/2 tsp. red pepper, 100 grams of basil leaves, salt – to taste.
Cook the amaranth seeds (20 minutes in two glasses of water) until a thick mass forms, cool, wipe through a sieve. Add the remaining components. Before serving, refrigerate.
