Pkhali of dried pumpkin with walnuts

Ingredients: dried pumpkin – 500 g, walnut kernels – 1.5-2 cup, Imereti saffron, utsho suneli – 1 tsp, each, Garlic – 2-3 cloves, coriander – 1 bunch of celery greens, dill – for 2- 3 sprigs, vinegar – 2-3 tablespoons, hot red pepper – to taste, onions – 1 (optional)

Recipe. Walnut mass: grind nuts . The greens are to be very finely chopped. Rub garlic to mush. Add walnuts to the greens, onions, garlic, spices, hot pepper, vinegar, salt. Mix everything. Mix pieces of dried pumpkin nut mass. Try it, and if there is no vinegar or salt or spices – add. It should be remembered that when pkhali saturated, it will take a portion of the spices. Pkhali is better to be prepared in advance, so that it perfectly steeped. Vinegar can be replaced with pomegranate juice.

Traditionally this pkhali prepared of dried pumpkin, pre-slicing the pumpkin into small pieces.

Onions finely chopped by half rings, sprinkle with salt. Leave for 10-15 minutes and then squeeze by hands to take away bitterness.

You can mix fresh pomegranate juice and vinegar in equal amounts. If the pumpkin is dry, then add a small amount of nut mass of water. Nut weight of the mixture should be like a very thick cream.
