Salad with Egg Noodles, Carolina Bean, and Sweet Pepper Dressed with Thai Dressing and Pumpkin Seed Oil

Ingredients: 1 small pumpkin, 4 shiitake mushrooms, 2 tablespoons pumpkin seeds, 1 bunch rocket, 1 radicchio head, 3 tablespoons pumpkin seed oil, 1 apple, salt to taste.

Directions: Cut a small pumpkin into rings. Deseed it and put it on the baking tray. Salt it, drizzle with vegetable oil and bake in oven until cooked. Put the caps of shiitake mushrooms or champignons on the baking tray, season with salt, drizzle with vegetable oil, and bake in oven too. Fry a bit pumpkin seeds. Salt radicchio and rocket, drizzle with balsamic vinegar, and add an apple thinly cut. Put a marrow on the plate, then put leaf lettuce and mushrooms over the top of it. Drizzle a salad with pumpkin seed oil, sprinkle with pumpkin seeds, and serve.
