Soup Made with Pumpkin, Cream, Bacon and Croutons dressed with Pumpkin Seed Oil

Ingredients for 6 portions: 1kg pumpkin, 100g carrot, 80g celery, 130g bulb onion, 100g bell pepper, 400g cream (33% fat), ground sweet paprika, 6 pieces bacon, 2–3 tablespoons vegetable oil, pumpkin seed oil.

Directions: Peel the pumpkin, cut into large pieces, put it on the oiled baking tray, and bake in oven for 30 minutes at 220°C. Dice the vegetables and fry them in the heavy-bottomed saucepan, season with salt and pepper. As soon as the vegetables start to turn golden, pour water (400ml), add baked pumpkin, and whisk everything with immersion blender. Add cream, taste and add some salt, if necessary, place on fire, bring to the boil, and remove from fire. Dice the loaf to make croutons, dry them in oven, then pour them with oil, and sprinkle with spices. Fry the bacon on the frying pan without any oil. Pour soup into the plate, put the fried bacon and croutons in the very center; then sprinkle with paprika, and pour with pumpkin seed oil.
