Eggplant Appetizers in Honey Marinade

Ingredients: 2 eggplants, 1 chili pepper, parsley (or coriander leaves), sesame seeds, 1 tablespoon dark honey, 3 tablespoons soy sauce with ginger, 1 tablespoon balsamic vinegar, 1 teaspoon ginger grated, 1/4 glass sunflower oil and sesame oil (for deep fat).

Directions: Cut the eggplant into 4–5 cm pieces. Season with small amount of salt and leave for 15 minutes. Make a marinade from honey, soy, vinegar, and ginger. Mix them with a fork. Heat the deep fryer with a deep fat made of vegetable and sesame oils. Wash salt from the eggplants and drain them in a sieve. Then fry until they are golden and soft. Take them out from the deep fat to a cooking bawl with marinade and stir thoroughly. Sprinkle with pepper, close with a lid and let it stand for half an hour. Put on the plate for further serving. Garnish the dish with sesame seeds, parsley or coriander leaves.
