Hemp oil aioli

Ingredients

  • 225 ml hemp oil
  • 1 garlic clove, finely chopped
  • juice of 1 lemon
  • 1 tsp mustard powder
  • 1 egg yolk
  • 1 tsp salt

Process

Put all the ingredients except the hemp oil in a bowl then bring them together with a whisk until there is a smooth, extremely yellow paste. Continue whisking while adding the oil a little bit at a time bringing it together until you have an emulsion. You can also put all the ingredients except the oil in a food processor, turn on the motor and slowly pour in the oil. Serve with crudites, chips or anything you desire. Aioli is a punchy garlic dip, similar to mayonnaise that is great for dipping crudities, spreading in sandwiches or dolloping on chips. The hemp oil gives this sauce a delicious nutty flavour. If you would prefer this dip slightly less nutty; use hemp oil.
