Amaranth grain porridge

Ingredients:

1 glass of amaranth seeds, 1 peeled and chopped chives, 1 medium peeled and sliced onion, 3 cups water or vegetable broth, sea salt, hot sauce – to taste, 2 plum tomatoes and 1 large fleshy tomato.

Cooking method.

Mix the amaranth, garlic, onion and broth in a 2.5 liter saucepan. Bring to a boil and cook over low heat for about 20-25 minutes, until most of the liquid is absorbed. Mix well. If the resulting mixture is too liquid or amaranth is soft enough (it should be crunchy but not too hard), lightly boil, stirring constantly, until thick – about 30 seconds. Add salt – to taste. Serve with a small amount of hot sauce and chopped tomatoes on the side dish.
