Process
Homemade Chips
In a pot boil 3-4 large potatoes until they’re just cooked.
Allow to cool before slicing each into thick pieces, cutting across the short side
to form ‘chips’. Dry slightly on a paper towel. You can prepare these & keep
them in the fridge.
In a pan or on the BBQ heat a thin layer of Macadamia Oil to medium heat.
Place chips in the oil & sprinkle with sea salt to taste.
Cook for a few minutes on either side until nicely browned.
The Fish
Dry pieces of fresh fish fillets ie Kingfish, Snapper or Tarakihi.
Lightly sprinkle each fillet with Cathedral Cove Macadamia Garlic Kelp
Sprinkle.
In a pan or on the BBQ heat a thin layer of Macadamia Oil to medium heat.
Place each fillet in the oil and sear for a few minutes until cooked most of the
way through, then turn to brown the other side.
Remove fillets and place on a serving plate or dish on top of your chips.
Garnish with a side of green salad. Serve immediately
