Ingredients:
1/2 cup amaranth seeds, 1.5 cups water, 2 tablespoons of olive oil, Bulgarian pepper, 3 small zucchini, 1/3 broccoli, small onion, small carrots and any other vegetables, salt and pepper to taste.
Cooking method.
Add amaranth seeds to boiling water, bring to a boil and reduce heat, cover and cook for 15-20 minutes, stirring occasionally. While the groats of amaranth is cooked, cut all the vegetables, pour oil in the frying pan, warm up and fry the vegetables, starting with the onion. Vegetables must be stirred constantly so that they do not burn. When the amaranth is cooked (it absorbs all the water), put it in a frying pan and mix it with vegetables. Before serving, sprinkle with fresh herbs.
