Ingredients: for 20 portions: 250g flour, 170g butter, 1 egg, salt to taste, 1 tablespoon wheat germ oil, 1.5kg fragrant apples, 150g amarettini almond cake, 1 lemon, 80g ground almond, 250g sour cream, 1 teaspoon fat or margarine.
Directions: Sift flour into the cooking bowl and make a small hole in the very center. Put there 50g of grated butter, an egg, a pinch of salt, and 120ml of barely warm water. Knead homogeneous dough with the help of mixer, then divide it into two parts, roll into balls, and spread them with butter. Use something to cover the dough and let it rise for 30 minutes at room temperature. Meanwhile, peel apples to make a filling. Cut them into four parts, deseed, and then cut into medium thickness pieces or circles. Force juice out of lemon and grate its zest. Crush amarettini. Melt 60g of butter in a stewpan and slightly stew 1/3 of apple. Remove from fire, stir in amarettini, lemon juice, lemon zest, ground almond, and the rest of apples. Sprinkle a work surface with sufficient amount of flour, roll out the dough into two extremely thin rectangles. Spread apple filling over them, then leave a small space from the edge and pour cream. Roll up the strudel from the dough and place it on the greased baking tray. Melt the rest of butter, spread strudels with it on all sides. Preheat oven to 220 degrees and bake a pie for 30 minutes over medium heat. Take it out and let it cool down a bit, cut into pieces and serve.
