Tykovka (Small Beetroot) Salad with Pumpkin Seed Oil

Ingredients: 200g pumpkin, 100g avocado, 150g mozzarella cheese, 100g sour apples, 20g raisin, 50–70g pumpkin seed oil and pomegranate juice.

Directions: Dice the pumpkin and fry until golden brown in pumpkin seed oil. Dice apples and avocado as well, mix with pumpkin, and add cheese. Season with sauce, and sprinkle with raisin. To cook sauce: grind in a mortar fried pumpkin seeds, add 1 tablespoon of pumpkin seed oil, and pomegranate juice.
