Salad with Beetroot, Spinach, Orange and Pumpkin Seed Oil

Ingredients: 4 beetroots, 2 oranges, 1 or 2 bunches spinach, 1 red onion, 2 tablespoons wine vinegar, 4 tablespoons pumpkin seed oil, 1/2 tablespoon Dijon mustard, spices.

Directions: Wash the beetroot, cut its top and root, wrap into the foil and bake in oven at 180˚С. Cut oranges into circles and peel them. Cut red onion into rings or semirings. Add beetroot, peeled and coarsely chopped. Add whole small spinach leaves, and coarsely cut big leaves. Dress with pumpkin seed oil or another vegetable oil, wine vinegar and Dijon mustard. Season with salt and pepper to taste.
