Macadamia Mussel Fritters

Ingredients

  • 1/2 Chopped red onion
  • Fresh red chilli (qty to taste)
  • Chopped coriander or parsley
  • 40 g Cathedral Cove Macadamia Chilli Kelp Sprinkle
  • 200 g Chopped Mussel Meat
  • 1 cup self raising flour to 1 c beer or iced water
  • Salt & Pepper to taste
  • Cathedral Cove Macadamia Oil for frying

Process

Mix flour and beer to a fritter consistency.

Add all other ingredients and mix.

Heat a heavy pan and coat with a thin layer of macadamia Oil.

Spoon the mixture into the keeping the fritters to the size of 2 bites.

Serve with a dipping bowl of sweet chilli sauce.
