Ingredients: 150g soy beans, 1 celeriac (about 500g), 2 tablespoons fruit vinegar, 0.5 teaspoon ground garlic with salt, 1 tablespoon soy sauce, 5 tablespoons wheat germ oil.
Directions: Wash soy beans in cold water. Sort out bad surfaced beans. Leave soaked beans for 12 hours — it is better to soak them for the whole night. Then boil them for about one hour (do not salt) covered with lid over low heat. Drain soy beans and let them cool down. Boil the celeriac (unpeeled) in salted water for about 60 minutes. Then cool it down in cold water, peel and dice. Mix soy beans with celery. Mix vinegar, garlic, salt, soy sauce and wheat germ oil. Add dressing to the salad, cover with lid and leave for 30 minutes at room temperature.
