Cooking method.
First fry in the oil cut into cubes zucchini (3-4 minutes). Add a cup of amaranth groats and allow it to roast for a couple of minutes, then pour in two cups of water, along with the seasoning (garlic, parsley, oregano, basil, rosemary, cumin, marjoram), add salt and black pepper to taste. After boiling, reduce the heat and allow the dish to cook. Amaranth seeds are cooked for about 20-25 minutes, after which a layer of dense water forms on top, you just need to gently mix it, so that the groats absorb water. If you want to get the rind, you can add a little more water and cook for half an hour instead of 20 minutes.
