Macadamia Garlic Encrusted Salmon with Soba Noodles

Ingredients

  • Akaroa Salmon fillet (skin on pin bones out)
  • Macadamia Garlic Kelp Sprinkle 20 g
  • Cathedral Cove Macadamia Oil
  • Soba Noodles
  • Lime or Lemon
  • Fresh Coriander

Process

Heat an oven to 200c. Cook soba noodles in a pot and once ready set aside.

Cut the salmon fillet into 25 mm portions, on top of each portion coat with approx 5 grams of Cathedral Cove Macadamia Garlic Kelp Sprinkle. Drizzle a little Macadamia Oil over each to achieve a golden crust.

Place the fillets on a pre-heated oven tray or heavy pan in the oven and bake for approx 10 min checking every 3 min to avoiding over cooking.

Dress soba noodles in some Macadamia Oil, Tamari or Soy Sauce and a squeeze of lime or lemon juice. Arrange noodles in deep bowls, remove salmon from oven and place on noodles. Garnish with fresh coriander. Serve with a side of fresh garden salad.
