Marrow and Pepper Salad

Ingredients: 3 yellow sweet peppers, 3 spring onions, 3 marrows. To prepare dressing: 3 tablespoons milk thistle oil, 2 tablespoons wine vinegar, 1 teaspoon mustard, salt, and pepper.

Directions: Wash and peel the peppers, core them and cut into long stripes, halve the stripes. Peel the onion and cut into thin rings. Wash and peel the marrows, cut them into thin circles. Mix the dressing ingredients in the salad bowl and whip with a wire whisk; add the vegetables. Let stand for 30 minutes. Serve with fresh-baked bread.
