Salad of kinoa seeds with baked vegetables and cheese

Ingredients for 4 servings:

1/2 glasses of kinoa seeds, 1 glass of water, 2 zucchini squash, 2 fresh red peppers, 1 tbsp olive oil, 1 tsp of Provencal herbs, brynza, salt – to taste

Cooking method.

Rinse groats thoroughly and pour into boiling salted water. Cover with a lid, reduce heat to a minimum and leave to cook for 15 minutes. Groats should absorb all the water. Zucchini and sweet pepper cut into large pieces, add salt, add olive oil and herbs, mix with hands and lay on a baking sheet covered with baking paper. Put in the oven, preheated to 190 ° C for 30 minutes. Take the vegetables out of the oven and cool. For a warm salad to mix a warm kinoa with vegetables and sprinkle with fresh cheese. For cold – cool all the ingredients and mix before serving. You can fill with acetic-balsamic or butter dressing.
