Ingredients (4 portions): 100g oat, 250ml water, 1 teaspoon granulated vegetable broth, 0.5 teaspoon dried thyme, 250g spinach leaves, 300g tomatoes, 1 stalk spring onion, 4 tablespoons apple vinegar, 1 tablespoon natural apple juice, 1 teaspoon ground mustard, salt, black pepper, 2 tablespoons wheat germ oil, 4 teaspoons cream, 2 tablespoons greens, finely chopped.
Directions: Mix oat, water, vegetable broth and thyme and bring the mixture to the boil. Cover with lid and boil for an hour over low heat. Remove the saucepan from fire and leave to stand for one hour. Sort out spinach, wash and dry it, and finely cop. Wash tomatoes, dry them up with a paper towel and dice. Peel the onion, wash it and cut it into rings. To make dressing, mix apple vinegar with apple juice, mustard, salt, pepper and wheat germ oil. Mix oat with spinach, tomatoes, onion and sauce, and stir thoroughly. Put the salad into the plates, add a teaspoon of cream to each portion and sprinkle with greens.
